- 2 (20 oz) cans pineapple chunks in juice, drained (reserve 6 tablespoons juice)
- 1 cup granulated sugar
- 6 tablespoons all-purpose flour
- 2 cups sharp cheddar cheese, grated
- 1 cup butter crackers (like Ritz), crushed (about 25 crackers)
- 4 tablespoons butter, melted
- 1/4 teaspoon salt

Preparation
- Preheat oven to 350°F (175°C).
- Lightly grease the casserole dish.
Making the Casserole
- In a medium bowl, combine:
- Sugar
- Flour
- Salt
- Reserved pineapple juice Mix until smooth.
- Add drained pineapple chunks to the sugar mixture and stir gently.
- Pour pineapple mixture into the prepared casserole dish.
- Sprinkle grated cheddar cheese evenly over the pineapple mixture.
- In a small bowl, combine:
- Crushed butter crackers
- Melted butter Mix until crackers are evenly coated.
- Spread cracker mixture evenly over the cheese layer.
- Bake uncovered for 25-30 minutes or until top is golden brown and edges are bubbly.
- Let stand for 5-10 minutes before serving.
