A comforting fusion dish that combines the rich, caramelized flavors of traditional French onion soup with perfectly cooked rice. Topped with melted Gruyère cheese and crispy bread crumbs, this recipe transforms a classic soup into a hearty rice dish.
Ingredients
- 4 large yellow onions, thinly sliced
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 2 cups long-grain white rice
- 4 cups beef broth
- 1 cup dry white wine
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 cloves garlic, minced
- 1 cup Gruyère cheese, grated
- 1/2 cup crispy bread crumbs
- Salt and freshly ground black pepper to taste
Instructions
- In a large, heavy-bottomed pot, melt butter with olive oil over medium heat.
- Add sliced onions and sugar. Cook for 25-30 minutes, stirring occasionally, until onions are deeply caramelized and golden brown.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add rice to the pot and stir to coat with the caramelized onions. Toast for 2-3 minutes.
- Pour in white wine and simmer until mostly absorbed, about 3 minutes.
- Add beef broth, thyme sprigs, and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
- Remove thyme sprigs and bay leaves.
- Preheat broiler.
- Transfer rice to a broiler-safe baking dish.
- Top with grated Gruyère cheese and bread crumbs.
- Broil for 2-3 minutes until cheese is melted and bubbly, and bread crumbs are golden brown.
Notes
- For vegetarian version, substitute beef broth with vegetable broth
- Can be made ahead and reheated before adding cheese and bread crumbs
- Leftover rice can be stored in an airtight container for up to 3 days
